Ribe Mjød was created to celebrate the 1300th anniversary of the city of Ribe. Ribe is the oldest city in Denmark and was one of the most important ports during the Viking Age.

This mead recipe was created in collaboration with the Viking Ribe Centre and contains apple and gall.

The apple juice slightly enhances the fruity and acidic notes of the mead and forms an excellent contrast to the sweetness of the honey.

To make honey wines, Dansk Mjød relies on old, traditional recipes with the addition of juices and herbs. Another special feature of many Danish meads is that fermentation is halted by adding alcohol. This gives the honey wine an unusual strength, which is kept in check by the remaining sweetness, achieving a liqueur-like smoothness and balance.
