The kiridashi is Japan’s original utility knife. It was used by both samurai and common farmers and was traditionally carried in the sleeve pocket of a kimono. In modern-day Japan, the kiridashi is used by almost everyone, from children to master craftsmen! Basically, it’s the stationary counterpart to the western pocket knife. A mid-range stainless steel from Japan whose higher chromium content ensures remarkable corrosion resistance. This steel is also relatively easy to grind and has relatively good wear resistance.
