This fillet knife with its 9-inch (approx. 23 cm) long, slightly curved blade ( 9-inch curved fillet ) is ideal for most saltwater and large freshwater fish as well as various game species. It makes it incredibly easy to break down fish and game into manageable pieces. Thanks to the considerable length and slight curvature of the blade, clean cuts can be made using pulling movements that reach all the way to the end. And this more generously sized knife is not only an excellent instrument for processing freshly caught fish or butchered game: many professional chefs also use it for processing meat in their own restaurant kitchens.

The razor-sharp blade is made from 420j2 stainless steel, a very durable steel that has a very high corrosion resistance (a particularly important criterion for use in damp or wet environments) and can be easily resharpened. In addition, this steel has just the right amount of flexibility to make filleting easy while protecting the tender meat and preserving its delicate flavor.

The handle is made of durable fiberglass-reinforced nylon and is coated with rubber and its surface is finished with Kershaw’s exclusive K-Texture ™. This structure (a repeating pattern of the letter K, as seen in the Kershaw company logo) provides the necessary grip and a secure hold at all times, even when hands are slippery.

For proper storage of this k-texture™ fillet knife, a blade guard is included in the delivery.
